EPURE arises Contemporary French Cuisine

Executive Chef Nicolas Boutin’s storied career has taken him around the world. Inspired by his travels, his cuisine is defined by purity in flavour, elegant simplicity and timeless ingredients that are seasonal, nourishing and tastefully light.

Chef Nicolas started his career in France with a top-notch fine dining education, honing his skills at restaurants such as Maison Lameloise (3 Michelin stars), La Maison Troisgros (3 Michelin stars), Les Jardins de l’Opéra (2 Michelin stars), Jean Bardet (2 Michelin stars) and Le Saint-James by Michel Portos (2 Michelin stars). In 2013, Nicolas returned to Hong Kong to open ÉPURE, earning a Michelin star in 2017.

Every plate is crafted to stimulate the palate and excite the senses in harmony. Signature dishes include White Button Mushroom Soup with Baby Spinach Gnocchi, a true Parisian creation made using champignons de Paris (King Louis XIV’s favourite mushroom); Cévennes onion stuffed with winter black truffle in every slice, paired with a crispy spelt wheat elevating the dish from excellent to memorable; the must-have Vol au Vent, a classic French recipe with a flaky, buttery puff pastry ring, langoustine, ‘petit bateau’ fish and liquorice-scented coulis inspired by Chef Nicolas’ childhood.

For dessert, the Grand Marnier Soufflé with Mandarin Sorbet is a luxurious dish with refreshing balance, while Tableside Caramelized Mille-Feuille with Fresh Strawberries and Lime Zest Chantilly is a dramatic and delightful conclusion to a fine meal.

Celebrating the best of France, ÉPURE also features a cheese cellar with 25 distinct varieties of rare, artisanal handmade cheeses. Using in-depth knowledge of French produce, only the finest cheeses by owners of small, traditional farms steeped in generations of cheese-making knowledge are directly imported from France on a seasonal basis.

Designed by the internationally renowned firm of Yabu Pushelberg, the interior dining space channels Parisian heritage and the serenity of nature.

From the fumed-oak rose-patterned ceiling to the mirrored walls, plum glass and mahogany wine cellar to the hand-painted murals, each surface is meticulously detailed. Curved booths and well-spaced tables are partitioned for privacy, and each compartment is adorned with chiaroscuro murals of whimsical forest scenes in rich, vivid shades and hues, hand-painted in a single sitting. With gentle curves juxtaposed against geometric forms, ÉPURE’s custom furniture is sculpted, modern and a tribute to French Colonial styling.

A recurrent hexagonal shape representing the royal family of ancient France is found throughout dining room furnishings, where metallic finishes and reflective glass and lacquer surfaces are moderated with rich custom fabrics.

An expansive floor-to-ceiling window range leads to the outdoor French garden terrace and sweeping views of Victoria Harbour, framed by vintage wall decorations and mood lighting that beautifully contrasts light and dark elements.

In the private dining room, walls are wrapped in back-lit laser-cut metal panels designed to mimic traditional molding, while a pair of stunning hand-sculpted, wire-woven pendants hang above the dining table. Complete with a personal outdoor terrace, the private dining room is a luxurious experience for guests looking for privacy over a relaxing aperitif.
